Mamma mia, a way to use up your zucchini
OK, so you don't have many tomatoes from your garden, but maybe you have a ton of zucchini.
And you're already getting worried about gaining weight this holiday season.
Here's a tip: Take those overgrown summer squashes -- we're talking no more than 12 inches long and about 2 inches in diameter -- and turn them into "spaghetti" for an almost calorie-free pasta.
Using a mandoline slicer with a julienne blade, you can transform this unwanted vegetable into a true delight by slicing it lengthwise into luxurious angel hair.
Simply saute the strands in oil in a large skillet over medium-high heat until the desired texture is achieved, season with salt and pepper and toss it with your favorite sauce. Pesto is amazing with it.
Garnish it with a large handful of cherry tomatoes, red, orange and yellow, and you'll have an economical, colorful, low-calorie feast on your hands.
